Baltymų keksiukai su pistacijomis ir aguonomis
½ puodelio (90 g) išlukštentų nesūdytų pistacijų
7 v. š. (100 g ) sviesto
5 kardamono ankštys, susmulkintos
1 vanilės ankštis
1/3 puodelio (60 g) ryžių miltų
½ puodelio (100 g) cukraus
2 v. š. aguonų
¼ a. š. druskos
4 kiaušinių baltymai
šiek tiek kapotų pistacijų keksiukams pabarstyti
Nedideliame puode ant vidutinės ugnies ištirpinti sviestą ir kaitinti, kol sviestas paruduos. Nukelti nuo viryklės, suberti kardamonus ir perpjautą vanilės ankštį. Leisti pastovėti 10 minučių ir perkošti. Pistacijas sumalti ir sumaišyti su ryžių miltais, cukrumi, aguonomis bei druska. Įmaišyti šiek tiek paplaktus kiaušinių baltymus. Įmaišyti ataušusį sviestą.
Į 8 standartinio dydžio ar 24 mini keksiukų formeles įdėti popierinius kepimo krepšelius. Tešlą išdėlioti į paruoštas keksiukų formeles, pabarstyti kapotomis pistacijomis ir kepti iki 180° C įkaitintoje orkaitėje 12 – 14 minučių (mini keksiukus) ar ~20 minučių (standartinio dydžio keksus). Ataušinti. Skanaus!
P. S. vietoje kardamono ankščių naudojau maltą kardamoną – ~½ a. š. įmaišiau į miltus. Vietoje vanilės ankšties galima naudoti ekstraktą ar tiesiog vanilinį cukrų. Vietoje ryžių miltų galima naudoti paprastus miltus. Labai kvapnūs, išraiškingo pistacijų skonio keksiukai. Rekomenduoju!
